1. Tell us about What’s The Catch?
The three of us owners, Richard, Brett and Glenn, have been good friends for a long time. Over time we have discussed various business concepts. Richard and Brett have long been involved in the food and fish industries. With all the hype surrounding the beaches with food trucks, Richard brought this to our attention and we decided that we would only do it if we had a really cool truck. We looked around and, ironically, found the Airstream the next day, and that’s how it started. We all went in full.
We wanted a retro throw back to the 1960s beach food truck. The Airstream gives us a more relaxed feel associated with the Keys and beaches of southern Florida. This leads to thoughts of shrimp freshly caught from the surf. It’s about the guy in flip flops and baggies who shows up for a quick bite.
2. What kind of food do you serve?
We are 90% seafood. We offer healthy grilled dishes and of course some fried dishes. On the healthier side, we have our Cilantro Lime Grilled Sea Scallop Taco, we have a nice fresh fried Ahi Tuna Taco and with our various Grouper Tacos we use a premium grilled grouper with no added butter or drop the fish in the deep fryer. We take the fillet and bring it from the grill to the buyer. On the fried side, we have our Island Shrimp Taco, Blue Lava Shrimp Taco, Cheddar Ranch Fried Chicken Taco, Buffalo Chicken Taco, and Fried Seasoned Catfish Taco to name a few.

3. Do you also offer gluten-free options?
Yes, everything we serve can be made gluten-free. The majority of our food is naturally gluten-free. For our tacos we offer the option of corn tortillas instead of flour tortillas. However, since not everything is automatically gluten-free, it’s best to let us know how you would like to prepare it.
4. Why did you choose a food food truck?
Chef Brett is a deep sea spearfisher as a hobbyist. For years he has been cooking us food and arranging large parties. When the opportunity presented itself to have a food truck with Chef Brett and Chef Richard, seafood was right in their wheelhouse and there really isn’t any other food truck on the street. It’s a preferred menu choice for all of us as owners and operators – it’s what we love to eat. We all prefer a great piece of fish over a burger. If we have food waists, we’ll enjoy it!
5. Have you ever thought about a restaurant?
We talked about it, but the truck is a way for us to get into the business to make sure we can be successful before we make the full financial commitment to a stationary restaurant. The truck also gives us the opportunity to try out different areas of the city.
6. What is the First Street Taco?
It’s a taco that’s inspired by a Peruvian gold sauce made here in Jacksonville. We had used the Peruvian sauce in our garden grill and wanted to make a taco out of it. We start with a fillet of grilled grouper that contains a small amount of Peruvian spices. While we grill the fillet, we spread a little more Peruvian gold sauce. When it’s cooked, we stack it in a taco shell along with lettuce, avocado, pico and coriander before we drizzle some more Peruvian gold sauce over the whole thing. It’s so good and everyone loves this taste. The name is inspired by the fact that the sauce is made here in Jacksonville.
